Recipes: White Chocolate Mud Cake

If you love sweet, you will love this, only small slivers needed, though multiple small slivers is probably a must.

What you need:

  • 250g butter, chopped coarsley
  • 180g white chocolate, chopped coarsley
  • 1 1/2 cups caster sugar
  • 3/4 cup milk
  • 1 1/2 cups plain flour
  • 1/2 cup self raising flour
  • 1/2 tsp vanilla extract
  • 2 eggs, beaten lightly

White chocolate ganache

  • 1/2 cup thickened cream
  • 360g white chocolate, chopped finely

What you do:

  1. Preheat oven to 170 degrees celsius. Grease a deep 20cm round cake pan, line base and side with baking powder.
  2. Stir butter, chocolate, sugar and milk in a medium saucepan over low heat until smooth. Transfer mixture to a large bowl, cool for 15 minutes.
  3. Whisk the flours, extract and beaten egg into the chocolate mixture, pour the mixture into the cake pan.
  4. Bake cake for about 1 hour 40 minutes; cool in the pan.
  5. Turn the cake, top side up, onto a serving plate. Spread ganache all over cake.

White chocolate ganache

  1. Bring the cream to the boil in a small saucepan. Pour cream over chocolate in a medium heatproof bowl, stir until smooth, cover. Refrigerate, stirring occasionally, for about 30 minutes or until spreadable.
