Recipes: Melting Moments

This recipe from Women’s Weekly is one of my dad’s favorite, they really do melt in your mouth.

What you need: 

  • 250g butter
  • 1/3 cup icing sugar
  • 1 1/2 cups plain flour
  • 1/2 cup cornflour

Lemon Cream

  • 60g butter
  • 1/2 cup icing sugar
  • 1 tsp lemon rind
  • 3 tsp lemon juice

What you do:

  1. Cream butter and sugar until light and fluffy. Add sifted flours, mix well. Put mixture into piping bag fitted with fluted tube. Pipe rosettes on to lightly greased oven trays, bake in moderate oven 10 to 12 minutes until pale golden brown. Cool on wire rack. join biscuits with lemon cream.

Lemon Cream: Beat butter until smooth, gradually add sifted icing sugar, beat until mixture is light and creamy. Beat in lemon rind and juice.

Tip: If you don’t have a pipping bag, just roll teaspoons of dough into a ball then flatten with a fork. Also feel free to change the flavor of your biscuits by omitting the lemon in the cream and replacing with passion fruit pulp or vanilla extract. Plus for something extra tasty add a layer of jam between your biscuits with vanilla cream.
