After a weekend of chocolate indulgence I thought a tasty and warm chai tea recipe from Donnah Hay would be a lighter welcome treat.
What you need
- 6 star anise
- 2 tsp cardamom pods
- 4 sticks cinnamon, plus extra, to serve
- 2 tsp whole cloves
- 2 tbs shredded coconut
- 1 tbs loose leaf black tea
- 2 1/2 cups milk
- 1/3 cup honey
What you do
- Place the star anise, cardamom pods, cinnamon and cloves in a mortar and pestle and grind until lightly crushed. Cut 4 x 20cm squares of muslin cloth and layer two squares together. Divide the spices, coconut and tea between the muslin squares, gather the ends of the cloth together to enclose the tea and tie with kitchen string.
- Place the milk, honey and muslin tea bags in a medium saucepan over medium heat and cook for 4 minutes or until milk just comes to the boil. Place the extra cinnamon sticks into cups and pour over the chai tea. Serve immediately. Serves 2.
Tip: These are a great idea for party favours.
