Recipes: Party Punch

It’s way to hot at the moment to think about baking, I think a refreshing icy cold punch is a much better option.  This recipe is the perfect mix of drunken fruit swimming in an irresistible blend of spicy ginger, alcohol and fizz.

What you need:

  • 1 cup finely chopped pineapple
  • 3 white peaches
  • 3 tbsp lime juice
  • 4 tbsp ginger syrup
  • 1 cup dark rum
  • 4 cups chilled ginger beer
  • 2 cups chilled peach nectar
  • 2 limes
  • handful mint leaves

Ginger Syrup

  • 3 tblsp grated fresh ginger
  • 1/2 cup sugar
  • 3 tbls water

What you do:

  1. First make a ginger syrup. Combine ginger, sugar and water in a small saucepan. Bring to the boil, then reduce the heat and simmer for 5 minutes. Remove from the heat and strain the syrup into a glass jar. When cool, store in the refrigerator until needed.
  2. Put pineapple in a large glass bowl. Peel and finely slice peaches and add to bowl. Add lime juice, ginger syrup and rum and stir to combine. Chill until ready to serve.
  3. Just before serving, stir in ginger beer and peach nectar. Add some ice cubes and garnish with finely sliced lime and torn mint leaves.

Tip: For a non-alcohol punch simply remove the rum and you have a great party drink that everyone can enjoy.
