It’s way to hot at the moment to think about baking, I think a refreshing icy cold punch is a much better option. This recipe is the perfect mix of drunken fruit swimming in an irresistible blend of spicy ginger, alcohol and fizz.
What you need:
- 1 cup finely chopped pineapple
- 3 white peaches
- 3 tbsp lime juice
- 4 tbsp ginger syrup
- 1 cup dark rum
- 4 cups chilled ginger beer
- 2 cups chilled peach nectar
- 2 limes
- handful mint leaves
Ginger Syrup
- 3 tblsp grated fresh ginger
- 1/2 cup sugar
- 3 tbls water
What you do:
- First make a ginger syrup. Combine ginger, sugar and water in a small saucepan. Bring to the boil, then reduce the heat and simmer for 5 minutes. Remove from the heat and strain the syrup into a glass jar. When cool, store in the refrigerator until needed.
- Put pineapple in a large glass bowl. Peel and finely slice peaches and add to bowl. Add lime juice, ginger syrup and rum and stir to combine. Chill until ready to serve.
- Just before serving, stir in ginger beer and peach nectar. Add some ice cubes and garnish with finely sliced lime and torn mint leaves.
Tip: For a non-alcohol punch simply remove the rum and you have a great party drink that everyone can enjoy.
