Recipes: Vanilla Cupcakes with Vanilla Butter Icing

Vanilla cupcakes are oh so tasty and are also really easy to transform depending on who’s coming over for your afternoon tea. Try this tasty recipe from Donnah Hay, really easy and super quick.

What you need:

  • 1 1/4 cups self raising flour
  • 1/2 cup caster sugar
  • 100g butter, softened
  • 2 eggs
  • 2 tblsp milk
  •  1 1/2 tsp vanilla extract

vanilla butter icing

  • 185g butter, softened
  • 1 1/2 cups icing sugar
  • 1 1/2 tblsp milk
  • 1 1/2 tsp vanilla extract

What you do:

  1. Preheat oven to 160 degrees celsius. Place all ingredients in a bowl and mix until pale and smooth. Spoon the mixture into tins lined with cupcake cases. Bake for 20-24 minutes or until cooked when tested with a skewer. Place on a wire rack to cool completely.
  2. To make the vanilla butter icing, beat the butter until pale and creamy. Add the icing sugar, milk and vanilla and beat for a further 10-15 minutes until pale and fluffy. Spread the cupcakes with the icing to serve.

images-1Tip: For a twist, use a cutter to remove a round from the top of each cupcake and scoop out some cake. Fill with whipped cream and lemon curd (look out for this recipe shortly), and replace the rounds. Dust with icing sugar to serve. Finger licking good!!!
